One of the best things about snowed in is being able to watch my sister cook some of her delicious recipes. My sister had made these burgers before, and I wanted to share this recipe for a while now because they are so tasty and good for you, and the best part of all? They fill that burger craving without giving you a big tummy ache at the end. Obviously you can’t have a burger without french fries, so the healthier option is sweet potato fries. I am starting to come around and like sweet potatoes, but I must admit I love regular potatoes better. Anyway, if you’re looking for a healthy option, this combo is definitely for you!
To make the burgers:
What you’ll need: 1 can black beans (drained), 1/4 cup cooked quinoa, 1/2 cup water, 1/2 cup breadcrumbs, 1/4 cup minced yellow pepper, 2 tablespoons minced onion, 1 large clove of garlic, 1/2 teaspoon of salt, 3 tablespoons olive oil, 1 egg white.
First, bring the quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover and simmer until quinoa is tender and water is absorbed (15-20) minutes.
Roughly mash the black beans with a fork in a small bowl.
Mix the quinoa, onions, bread crumbs, pepper, garlic, salt, olive oil and black beans with your hands.
Form the mixture into 5 patties.
Bake for 30 minutes at 400 degrees.
*245 calories per burger, 7.2G of fiber, 9.3G of protein.
To make the fries: Cut up three or four sweet potatoes and lay them out on a pan. Brush the top with olive oil, salt and pepper. You can also add cinnamon for extra flavor!
Cook for 30 minutes at 450 degrees!
